    (Makes over 3 quarts)

    Southern Comfort, most of 1/5th, @20 oz
    Pineapple in chunks, 12 oz, juice and all
    Maraschino Cherries, 12 oz, juice and all
    7up, 10oz
    1 large can of pineapple juice, 48 oz
    1/2 bottle of cranberry juice, 16 oz

    NOTES: After mixing, freeze a tray or 2 into ice cubes, so the punch doesn't get watered down by regular ice.

    Mix all together, chill.

    (Serves 2-4)


    4 lbs boneless chicken thighs
    1 cup pineapple juice
    1/2 cup soy sauce
    1/2 cup brown sugar
    1/3 cup ketchup
    1/4 cup chicken broth
    2 tsp fresh ginger root grated
    1½ tsp minced garlic
    green onions, sliced thin for garnish


    NOTES: If you use sweetened pineapple juice, reduce the brown sugar by 1 tblsp. Recipe from The Recipe Critic
     

    In a medium sized bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger and garlic. Reserve 1 cup sauce for basting. Add the chicken thighs and sauce to a Ziploc bag and marinate at least 3 hours or overnight.

    Grill chicken, covered, over medium heat for 6-8 minutes on each side or until no longer pink. Baste occasionally with reserved marinade during the last 5 minutes. Garnish with green onions if desired.
