Tamale Pie
(Serves @ 6-8)


2 tblsp olive oil
1 onion, chopped
1 bell pepper, chopped
2 loves garlic, minced
3 jalapenos, chopped
1 lb ground beef
2 cups diced tomatoes
2 cups corn kernels
½ cup chicken stock
1 tsp chili powder
1 cup corn meal
1 cup cheddar or jack cheese, grated
1 & 1/2 tsp salt to taste
3 green onions, chopped (optional)
½ cup sour cream (optional)


NOTES: You can substitute jarred or homemade sals for some or all of the chopped tomatoes. You could also add more another 1/4 cup of cornmeal into the recipe for a firmer texture. (also increase the water by 1/2 cup)
 

Add oil to saute pan over medium heat and saute the peppers, onions and garlic until softened, about 5 minutes.
Mix the salt into the meat and then add the meat to the sauted vegetables and cook until meat is cooked.

Add the tomatoes, corn, stock and chili powder, lower the heat and simmer together while preparing the cornmeal.

Pre-heat oven to 350 ° F.
Bring 2 cups of water to boil and then slowly add the cornmeal and whisking it in. Add ½ tsp salt. Now stir the cornmeal into the other ingredients. Put the mixture into a 9x13" buttered baking dish and sprinkle the cheese over the top.

Bake for 30 minutes.

Serve with a side of sour cream and green onions (optional).
