Thai Chicken Salad
(Serves 12)
2 tblsp sugar
7 chicken breasts grilled, cooled then diced medium
1 can coconut milk
1 cucumber, deseeded, then sliced
3 carrots, Julienne
1 large yellow onion, Julienne
red pepper flakes, to taste
3 tblsp sesame oil
1/2 bunch cilantro, minced
1/4 cup lime juice, add last and a little at a time then taste, to insure you have the perfect blend!

NOTES:

INSTRUCTIONS

Mix all the ingredients together well. Let sit before serving at least 1/2 an hour.
